Stuzzi's Beef Shin & N'Duja Ragu Recipe

One of the things we love most about Leeds is its incredible independent restaurant scene, and Stuzzi has long been one of our favourite places to recommend.

Known for bringing authentic Italian flavours to Leeds, Stuzzi has kindly shared their delicious Beef Shin & N'Duja Ragu recipe with us, so you can recreate a little taste of Italy at home.

Rich, comforting and packed with flavour, it's the perfect dish for a cosy evening, dinner party or special occasion.

Beef Shin & N'Duja Ragu

Serves 5-6

Ingredients

  • 600g diced beef shin
  • 500ml good quality chicken or beef stock
  • 200ml red wine (Chianti works beautifully!)
  • 1kg chopped tomatoes
  • 1 diced red onion
  • 2 diced carrots
  • 2 sticks of celery
  • 15g chopped capers
  • 30g N'Duja
  • Thyme
  • Rosemary
  • Bay leaves
  • Salt and pepper
  • 1 tbsp chopped garlic
  • Method

Step 1

Season and brown the beef shin, adding the chopped rosemary, thyme and a bay leaf.

Step 2

In a separate pan, gently sweat down the onions, celery and carrots until softened.

Step 3

Add the capers, garlic and N'Duja to the vegetables and continue cooking slowly.

Step 4

Deglaze the beef with the red wine and reduce by half.

Step 5

Add the stock and reduce by half again.

Step 6

Combine both pans, add the chopped tomatoes and season to taste.

Cook slowly on the hob or in a slow cooker until the beef becomes meltingly tender.

Step 7

Cook your pasta separately, drain and combine with the sauce. Finish with butter and grated pecorino.

Step 8

Pour yourself a glass of the remaining wine and enjoy!

Remember, the most important ingredient in cooking is the love and patience you give to the dish. You can't rush art.
